When we began our journey to help operators our goal was simple, find out what people are doing, establish if that was optimal, if not decide what was and develop a plan working with everyone who could have an impact to close the gap. We soon came to realize that optimal was very different from one place to the next and those that could, would or should have an impact on results was also very different. Even businesses that sold the same offering, to the same clientele in the same geographical area had very different objectives and results. We quickly realized that a couple of minor adjustments had major impacts. We saw the impact small changes could have on the bottom line almost immediately and more importantly the importance of the execution on results. Better systems were good but with excellence in execution, magic happened. So we have been working with TEAMS of owners, managers, servers, bartenders, bar backs, chefs, line cooks and everyone who could, should and would have an impact on the business to learn, understand and be engaged. Ultimately, sharing the knowledge because knowledge is only power when it is shared.
